My first recent discovery is Peppers!!!!!! I just fell in love with them when during my stay in Mysore. On a lazy Sunday afternoon, my host at Anokhi Garden decided to grill some Red peppers. It just filled the whole house with this beautiful sweet, hot intoxicating aroma that was just too good to ignore. Now I have
been eating peppers, obviously, all the time but something about Peppers being the key ingredient just fascinated me to explore more.
So here’s something I came up with, Grilled pepper salad.
All you need is-
Balsamic Vinegar or lemon
Parsley or any herb really
Salt to taste
Parmesan Cheese( if you wish to be adventurous)
Stick the Peppers in your oven at aprx. 200C and let them smoke for around 10min.They should be nice and charred not burnt of course.
Once they cool down a bit (so that you can touch them) pull the skins from the peppers out.
so they look like this….
and then chop them up ( remove the seeds and stalk) add garlic, a dash of lemon or balsamic vinegar, olive oil, parsley , seasoning and a small hint of Parmesan cheese and its done.
You can eat it straight from here or grab a whole wheat bread or pasta to toss it with . It tastes amazing and is super fantastic for you.
