Its spinach soup with a twist which technically makes it a
wholesome meal in itself. And it is sooooooooo satisfying that you will want to reach out for the second helping and here’s the best part ……… without guilt!!!!!!!
So the key four(familiar) ingredients are-

So wash all these well and tumble them into your trustworthy pressure cooker. Now remember, that if you’re the types who doesn’t like chewing their soups, do not put in the Spinach stems because we are not going to strain this soup so it will retain all the fiber you put in. Also cut the tomatoes in halves, no smaller. You’ll soon see why…
So cook it for a couple of whistles and then let it cool down. At this stage you can use your regular kitchen tongs and pull out the skin from the tomatoes. This the reason why we left them as halves if you cut them any smaller and end up overcooking it the skins are going to be all over!!!!! and its not a pretty sight. I have removed it from the vessel to give you a better shot but you can easily do it in the same utensil in which they were cooked.
and then transfer them to your blender.
Blend it together till its homogeneous in consistency and …..you’re done.
Add seasoning at this stage and you can reheat it too if you like your soups hot. Based on your taste preference you can add a little butter or have this with wholewheat bread sticks or (ahem!!!) add the best toxin flusher ever!!!!!!
